Skate w/ Lemon, Butter & Capers

Skate w/ Lemon, Butter & Capers

  • Two 5 oz Skate Wings
  • 2 TBSP olive oil
  • 2 TBSP butter
  • salt and pepper to taste
  • 2 tsp capers
  • 1 tsp caper brine
  • juice from 1/2 lemon

In a large heavy-bottomed skillet, heat olive oil and butter over medium high heat.  Season your skate wings with salt and black pepper, then carefully place them in the hot skillet.  Add capers and brine to the pan, and allow the skate to cook for about 3 minutes or until the edges are opaque.  Carefully flip the skate and allow to cook another 3 minutes. Squeeze the lemon juice over the fish in the last seconds of cooking. Transfer the fish to a plate and spoon the caper & butter sauce over the top.  Dig in & enjoy!
