Roasted Beet Salad with Herbed Goat Cheese & Arugula

Beet SaladBeets are an amazing vegetable – they store really well in a root cellar and because of that, are available virtually year-round at your local farmers’ market. They’re also really good for you!  On a recent episode of HiB, Chef Cal Elliott of Rye made us a Beet Ravioli that was by far the best beet dish I had ever tasted.  It incorporated beets three different ways with loads of other flavors that danced together in a delectable butter and broth sauce. I literally wanted to ask for more and lick my bowl – that’s how good it was! This super fancy dish, however, is best left to a professional chef in a restaurant kitchen, so I created a Roasted Beet Salad with Herbed Goat Cheese that captures Cal’s flavors in a recipe easy enough for any home cook.

ROASTED BEET SALAD WITH HERBED GOAT CHEESE AND ARUGULA:

(SERVES 4)

  • 4 Medium-sized roasted beets, 2 Golden, 2 Red (recipe follows)
  • 1/4 lb baby arugula
  • Shallot Vinaigrette (recipe follows) 
  • 2 TBSP toasted pine nuts
  • Herbed goat cheese (recipe follows) 

Slice the beets thinly on a mandolin, starting with the golden beets, and moving onto the red in separate bowls to avoid color transfer. Coat with shallot vinaigrette.  Arrange the beets overlapping and alternating in a circle. Dress the arugula to taste and place in the center on top of the beets.  Sprinkle with pine nuts and herbed goat cheese.  Finish with a touch of sea salt and a crack of black pepper.

FOR THE ROASTED BEETS:

  • 2 golden beets
  • 2 red beets
  • olive oil, salt and pepper

Preheat oven to 425.  In an ovensafe dish, place the cleaned and trimmed beats into the baking dish, drizzle with olive, salt and pepper and cover tightly with foil.  Roast in the oven for an hour or until the beats are tender when a knife is inserted to the center.

FOR THE VINAIGRETTE:

  • 2 TBSP minced shallot
  • 1 TBSP dijon mustard
  • 1 TBSP honey
  • 1/4 cup white wine vinegar
  • 1/2 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Combine all ingredients in a mason jar and shake it up!

FOR THE GOAT CHEESE: 

  • 4 oz goat cheese
  • 1 tsp chopped celery leaves
  • 1 tsp chopped chives
  • 1 tsp chopped dill
  • salt and pepper to taste

Combine all ingredients in a bowl and mix!
