Hungry in Brooklyn – Beets

SONY DSCBeets are a funny vegetable, and can be intimidating enough even for the savviest of home cooks.  Most of us think of the bright red beets, but there are actually many varieties and they’re all slightly different in flavor. One thing is certain, beets are always sweet and delicious when roasted, and armed with some knowledge and a pair of rubber gloves, you’ll be a beet-making pro in no time.  On this episode we head to the McCarren Park Green Market where Lauren Utvich of Garden of Eve tells us everything we need to know about this nutritious root vegetable.  Then we’re off to Rye Restaurant where award-winning chef Cal Elliott makes us a Beet Ravioli that is by-far the best beet dish I have ever tasted. This super fancy dish, however, is best left to the professionals, so we finish out the episode with a Roasted Beet Salad with Herbed Goat Cheese that captures Cal’s flavors in a recipe easy enough for any home cook.
