Self-Rising Flour

FlourWhen I set out to adapt a recipe for Chocolate Cake, a lot of the recipes I was coming across called for “Self-Rising Flour.”  I may not be a pastry chef, but I know the ingredients that make cakes, cookies and breads rise are usually baking soda, baking powder, or yeast.   The only self rising flour I could find was of the big-business-bleached variety, full of other additives like calcium phosphate.  Mmmm.  How hard could this be to make on my own?  I left the grocery store in a huff determined to find another solution.

Self Rising Flour should contain only three ingredients:  Flour, Baking Powder and Salt.  By making your own with unbleached organic flour such as King Arthur, or better yet – a locally milled flour from your farmers market like Cayuga Pure Organics, you can ensure that your flour is fresh and good for you. Make a bunch at once and keep it on hand for whenever you get the urge to bake a cake.


4 Cups Unbleached Organic All Purpose Flour
2 Tablespoons Baking Powder
2 Teaspoons Kosher Salt

Whisk to combine or if you’d prefer, sift the ingredients together with a sifter.  Store in an airtight container.
