Broccoli & Feta Salad


brocoli salad with fetaI’m always looking for new ways to enjoy classic vegetables, particularly when they’re in season and at their peak in the middle of summer!  I’ve always loved broccoli but leafy greens like kale and chard have seemed to replace it lately in my shopping cart. I have no explanation for it!  What has broccoli ever done to me?  It was time to go back to an old standby, so I decided to shake things up a bit and give broccoli a fresh twist.   This super simple and delicious Broccoli and Feta Salad has a subtle tang that will have everyone asking for a second helping of their green veggies.

Broccoli & Feta Salad

  • 1 head of broccoli, chopped and steamed for 1-2 minutes, cooled
  • 3 oz feta cheese (look for sheep’s milk feta for extra tang)
  • 2 TBSP fresh-squeezed lemon juice
  • 3 TBSP extra virgin olive oil
  • 1 garlic clove, minced
  • 1/4 tsp red pepper flakes

Combine feta, lemon juice, olive oil, and garlic in a food processor or blender and blend until smooth. Toss with the broccoli and sprinkle with red pepper flakes.  Enjoy!
