Asparagus – Oven Roasted

asparagusAsparagus is healthy, delicious, and really easy to make.  All you need is a sheet pan and 8 minutes to get perfect roasted asparagus every time. Asparagus – Oven Roasted

  • 1 lb asparagus
  • zest of one lemon
  • tablespoon olive oil
  • salt & pepper
  • juice of half a lemon

Preheat oven to 400 degrees.  Cut the ends of the asparagus off, and lay in a single layer on a sheet pan.  Toss with zest, olive oil, and salt and pepper and roast for 8 minutes. Toss with the lemon juice just before serving.  Try it as a side dish to Skate w/ Lemon & Capers for a super quick and healthy dinner.
